Spicy radish roti

My quick to make lunch recipes are mostly very healthy too. This one tops the health quotient. Radish has so much juice in it that typically in the mooli paratha recipe the juice is squeezed out for the paratha so that it could be easily rolled..I use the alternate recipe which keeps the juices intact as they are rich in : Vitamin B6, magnesium, calcium, folic acid and potassium. Buy radish with its leaves, the leaves are rich in  vitamin C. 

Ingredients ( to make 10 thin rotis )

1 medium size White radish : peel the skin off and grate, add few leaves by tearing them into small pieces. 
Half Onion : chopped fine
2 green chillies : chopped fine
1/2 spoon grated ginger
Coriander leaves : finely chopped
Salt : 1/2 spoon
Red chilli powder : half spoon
a pinch of carom seeds (ajwain)
2 cups : Whole wheat flour (1/2 cup extra to roll the dough ) 
Oil


Method : Mix all the above and knead in into a rough dough without adding water. The radish will leave enough juices to knead the dough.




Make egg size balls and roll it with a pin onto thin rotis, using dry dough. Use a flat roti pan. Flip and cook both sides by pouring little drops of oil around the pan. 



Serve with pickle/tomato chutney and curd.
