Fried rice – Egg and vegetables/Sprouts and chicken

Me and my husband  have steamed rice for Dinner, everyday.  For lunch, I am usually alone…so that’s when i make a quick meal of whatever is leftover in the fridge. A quick bowl of egg fried rice with left over rice is a favorite. Lemon rice, coconut rice, chilli jeera rice are other quick recipes i shall post soon.

Scramble eggs, Saute spring onions, green chillies chopped, ginger garlic paste and a dash of soya sauce, then add rice….stir it in the pan till rice gets a coat of oil, add salt n pepper and serve hot. If you have left over  steamed rice, its done in a matter of 5 minutes.

Fried rice taste best when its made two bowls of rice at a time. since each of the ingredients require cooking and stir fry, large quantities would not bring the desired results.

My mom used to make egg rice with ghee for me when I was a kid. I still remember how much I loved them.

To make noodles and fried rice or even vegetable stew I suggest you could chop different vegetable and keep it in the freezer, ziplocked. Carrot and beans chopped, green peas, corn etc frozen in small quantities comes handy for such recipes.

There can be different variations of what can be added in fried rice. When you buy chicken, you could cook some boneless pieces in salt and pepper and use it with little broth for fried rice. Green lentil sprouts, boiled chicken, carrot, beans, capsicum and chopped celery, make a great combination too. Instructions mentioned separately below
Or Boil prawns in salt and turmeric, chop them small or put it whole, stir fry with veggies and add.

Here in Philippines, we get to see people having rice and noodles with chop sticks. There are all kinds of chopsticks available in the market which they fancy buying and having a collection. So this time I tried eating my bowl with chopsticks. Well…every time it fell right back into the bowl, but at least I tried, will keep trying, until I perfect it.




Ingredients:
Rice (long grain – basmati preferable)
Eggs (one egg for a bowl of fried rice) – scramble into big pieces.
Vegetables (corn, carrots, beans) carrots n beans chopped into small pieces and half boil them in salt water, drain n keep aside.
Spring onions – finely copped
1 Onion- finely chopped
Ginger garlic crushed
Soya sauce
Salt and pepper powder
Lemon juice – 2 spoon for each cup of rice
Oil or butter for frying
You can add tastemaker to add flavor..just taste n check for the extra salt these cubes have.



Method : If you are making fresh rice , cook rice in water (ratio : 1.5 cup water for 1 cup of rice), add lemon juice, some salt and a spoon of oil. Ensure rice is not over cooked. Spread the cooked rice in a tray and let it cool
Take butter or oil in a pan, add onion ginger and garlic, when it gets soft, add chopped veggies. Add salt. Mix well. Add a spoon of soya sauce, Mix well. Add rice and scrambled egg, keep stirring and cook till the rice gets a greasy coat in the pan, add the spring onions, place lid for couple of minutes, open add pepper powder and serve hot.


For chicken & green sprouts fried rice : boil the sprouts along with veggies, precook chicken in salt and pepper. Add a spoon of the chicken broth along with soya sauce.
